Pizza Bread

"I dare you not to eat the whole bread as soon as it comes out of the oven."

This is the ultimate comfort food. Irresistible, and as soon as I take it out of the oven, everybody gathers in the kitchen within minutes. I never managed to actually serve it with something, it's generally gone in no time. Like many of my recipes, I have written down for you what I usually use, but I improvise a lot with things that I have available. If I make it just for myself, I add olives for example. But some members of  the family don't like olives, so... Enjoy!

Here's the recipe:

Ingredients:

Fresh made pizza dough from your favorite grocery store, or you can make it from scratch if you prefer.

1/2 onion

3 cloves of garlic

1/4 cup sun-dried tomatoes, cut up

1 cup of quattro frommagio

fresh thyme

fresh rosemary

fresh tarragon

extra virgin olive oil

flour for dusting

pumpkin seeds and olives: optional

1  Take the dough out of the fridge and let it come to room temperature.

2  Cut up the garlic, onions, and tomatoes. Heat a frying pan with a splash of olive oil. Stir fry the garlic and onions until soft and golden brown. Then add the tomatoes. Set aside and let the mixture cool down.

3 Pluck the thyme, rosemary, and tarragon leaves from their stems and put them in a cup. Cut into small pieces with scissors.

4 Take the dough and roll it into a ball in a mixing bowl. Sprinkle the herbs over it and mix gently until all the herbs are blended throughout the surface of the dough-ball. Transfer it to a work surface.

5  Dust the work surface with some flour before putting the dough on it. Spread out the dough. Evenly add the onion, garlic, tomato mixture, and a 1/2 cup of cheese. Fold the dough over and over again till everything is mixed in properly. You can add a little flour if it gets too wet. The dough should firm but pliable.

6 Shake a dusting of flour onto the baking tray. Finally, roll the dough out into an oval shape coated in flour. Put the pizza dough on the tray and sprinkle the remaining 1/2 cup of cheese on top. Cover with plastic wrap.

7  Let it stand for half an hour.

8  Preheat the oven on 500F/ 260C

9  Bake for 15 minutes. The bread should be golden brown and the cheese on top is melted, like a pizza.
