Limoncello

"The taste of sunshine."

As summer approaches, we love making Limoncello from the lemons on our garden tree. It’s easy to prepare and the perfect digestive for warm summer nights under the stars.

The super simple recipe:

Ingredients:

    •    Lemons (preferably untreated; if not, wash well)
    •    Your favorite vodka
    •    White sugar
    •    Water


Instructions:
    1.    Peel the lemons, avoiding the white pith, and fill a jar with the peels.
    2.    Cover completely with vodka.
    3.    Place the jar in a dark spot for 2–3 weeks to let the flavors infuse.
    4.    After soaking, strain the vodka to remove the peels.
    5.    Prepare a simple syrup by gently heating equal parts water and white sugar until the sugar dissolves. Let it cool completely.
    6.    Sweeten your lemon vodka to taste with the syrup (we like ¼ to ⅓ syrup to vodka, but adjust to your preferred sweetness).
    7.    Chill in the fridge, pour into small glasses, and enjoy your homemade sunshine!
